WELCOME TO DAMON BAEHREL... Located in beautiful rural Greene County in the Upper Hudson Valley region of New York State, Damon Baehrel is a truly one-of-a-kind 20 seat restaurant/property. Located in the basement of Damon and Elizabeth Baehrel's home in Earlton, NY, Damon Baehrel (formally known as Damon Baehrel at The Basement Bistro) was established in 1989 to showcase their former catering business, Sagecrest Catering. The restaurant quickly took on a life of it's own, and has become a destination for food enthusiasts from around the world, who often wait several years to secure a reservation. Damon works completely alone in the restaurant, and on the surrounding 12 acre property, which is the ONLY source of ingredients, Native & Cultivated, that Damon utilizes in his original Native Harvest Cuisine. In addition to preparing dozens of varieties of his own homemade aged cheeses, cured meats, flours, vinegars, pressed oils, butters and breads on premise, Chef/Grower Baehrel hand prepares and serves every course of his daily changing multi-course Tasting Menu, which takes about 4-5 hours to experience, and is the only dining format offered. Damon also serves as the wine specialist and enjoys offering many hand crafted older vintages that are part of his collection. A large part of Damon's life is devoted to nurturing the source of all the restaurant's raw ingredients, and his Sagecrest Native AND Organic Gardens sustain the restaurant year round. By studying and observing what grew and thrived naturally on the acreage, and slowly adding hundreds of herbs, vegetables and fruits to the property, Damon now cultivates, grows, gathers, forages and uniquely preserves these organic ingredients for use in his original Native Harvest Cuisine.
